Air Fried Zucchini Sticks

Ingredients
4 medium zucchini
1 egg
About 1 tablespoon water
1/2 cup grated Parmesan cheese
Italian Zest seasoning, to taste
Avocado oil spray
Everything Pepper seasoning, to taste
Celtic sea salt, optional
Directions
1. Prep the zucchini.
Cut the ends off the zucchini. Slice each zucchini into quarters lengthwise, creating long zucchini sticks.
2. Make the egg wash.
In a bowl, whisk together 1 egg and about 1 tablespoon of water.
3. Make the Parmesan coating.
In a separate bowl, mix together the grated Parmesan cheese and Italian seasoning.
4. Coat the zucchini.
Roll each zucchini stick in the egg wash, then roll it in the Parmesan mixture so the cut sides are coated.
5. Arrange on tray.
Line your air fryer tray or baking tray with parchment paper. Place the zucchini sticks skin-side down so the coated sides can roast.
6. Optional variation.
For a few zucchini sticks, skip the Parmesan coating. Spray with avocado oil and sprinkle with Everything Pepper seasoning instead.
7. Sprinkle with a small amount of Celtic sea salt, if desired.
8. Air fry or bake.
Cook at 425°F for about 20 minutes, until the zucchini is tender and the coating is golden.
9. Serve.
Serve warm with marinara sauce, Greek yogurt tartar-style sauce, or your favorite dipping sauce.
